We’ll begin the evening by preparing pizzicagnolo panelle, crispy chickpea fritters that are a beloved street food throughout Palermo, finished with a squeeze of fresh lemon. For the entrée, guests will work in groups of four to create a traditional timballo di melanzane, a hearty baked dish of pasta and meat wrapped in tender eggplant slices and served with a fresh red sauce on the side. To end the evening on a sweet note, you’ll enjoy Minne di Sant’Agata, delicate cakes filled with ricotta, orange peel, and chocolate chips, finished with a light powdered sugar glaze.
